Sirloin steak with Red Miso Butter Bean Mash & Herb Salad
Our friend Monwar Hussain (@_studiomon) sent us this amazing video of him making sirloin steak with red miso butter bean mash and a herb salad. The sirloin steak is generously coated in our Smokey Chilli & Coffee BBQ Rub. Check out the video on our Instagram.
Miso Butter Bean Mash Ingredients:
1 tin/ jar of butter beans
1 tsp red miso
Runny honey
1⁄2 tsp Unsalted Butter
200ml water
Method:
Put everything into a small saucepan and heat gently until simmering. Let cool before putting into your blender until smooth. You may need to add more water to get the right consistency. If you’re feeling fancy, pass it through a sieve to get a buttery smooth mash! Put to one side and start on your steak
Sirloin Steak Ingredients:
1 sirloin Steak (thick cut around 1”)
Field Blends Coffee & Smokey Chilli BBQ Rub
Cold Unsalted Butter - 100g
Method:
Preheat a hot pan or skillet until smoking.
Leave the steak out of the fridge to get to room temp.
Preheat a hot pan or skillet until smoking hot. Sprinkle the steak generously with Field Blends Coffee & Smokey Chilli BBQ Rub to get a good even coating on the steak. Cook the steak in a little olive oil on a medium to high heat to build a nice crust. I went medium rare, cooked for around 3-4 minutes on each side to reach an internal temp of 52oC. For the last few minutes, add the unsalted butter and baste.
Let the steak rest for the same amount of time you cooked it for
While your steak is resting, you have enough time to make the salad
Herb Salad Ingredients:
A small bunch of fresh Parsley
Half a white Onion
Red Chilli
Olive oil
Method:
Rinse the parsley and pick and leaves off into a bowl. Using a mandoline or a knife, thinly slice the onions into thin slices. Give the onions a wash under cold water to wash off the harsh onion flavour. Finally slice some red chilli leaving the seeds in if you want an extra spice kick. Mix everything together in a bowl with a little drizzle of olive oil
To assemble, Lay a few spoonfuls of the mash onto a serving platter. Followed by the sliced steak and top with a nice handful of your herb salad and enjoy.
