GRILLED SUMMER VEGETABLES & WHIPPED FETA

Summer is here and British vegetables are in full swing. This one’s an easy one. We’ve used our Field Blends Lemon, Sumac & Green Herb blend to season some grilled local vegetables and served with a whipped feta for a creamy, tangy base.

INGREDIENTS:

COURGETTE
TENDERSTEM Broccoli
Leek
Asparagus
1 BLOCK OF Feta
Full fat Greek yoghurt
Lemon
Olive Oil
Field Blends Lemon Sumac & Green Herb

Method

Grill your vegetables over the barbecue or in a grill pan if you’re in the kitchen. We used our Snow Peak grill with some Apple Wood from Love Logs for a smokey flavour. When the veg is tender, take off and season generously with olive oil and season generously with a large pinch of Field Blends.

For the whipped feta, use one pack of feta, 3 heaped tablespoons of yoghurt, the juice of a whole lemon a generous glug of olive oil and a generous sprinkle of our Lemon, Sumac & Green Herb and mix whip together with a fork until smooth.

Layer up a base of whipped feta, stack the vegetables and enjoy.
